This upscale Canmore steakhouse at Silvertip Resort serves 100% Canada Prime beef, this country’s highest grade. All steaks are prepared with housemade seasonings and finished under a 1,500°F infrared flame boiler that seals in flavour and juices. Other menu items (including fresh seafood) satisfy a variety of tastes.

Atmosphere & Accolades

Rustica was voted Best Steak in Alberta 2015 by Open Table, and Best Steak in the Bow Valley by Rocky Mountain Outlook newspaper readers. This restaurant has a Top 10 Alberta Steakhouse rating by TripAdvisor and has won consecutive Wine Spectator awards since 2009. Its rustic, elegant atmosphere is enhanced by Douglas fir timber ceilings, a floor-to-ceiling rundlestone fireplace, leather chairs with high backs and formal table settings. Patrons are treated to stunning golf course and Mount Lady Macdonald views, as well as frequent wildlife sightings through immense windows and from the serene cobblestone patio. The private room that seats up to 12 is perfect for family and small group events.

  • Salads: panko crusted goat cheese (walnuts, orange, hazelnut vinaigrette); Rustica (greens, cucumber, tomatoes, Swiss dressing); Caesar
  • Tuscan Style Grilled Chicken Breast (oregano, garlic, rosemary, chili flakes, sweet Basquaise sauce); Classic Duck à l’Orange (slow cooked leg and breast, bigarade orange sauce); Canadian Char Filets (Mousseline potatoes, cabbage, double smoked bacon, white wine butter sauce)
  • The 1,500°F infrared flame boiler locks in the flavours and juices of the Canada Prime grade steaks that are Rustica’s calling card
  • Canada Prime Steaks (signature dry rub, garlic butter, port wine reduction; served with roast potatoes and garden vegetables): New York cut, petit or grande filet mignon, prime rib chop, 30-oz bone-in ‘Driver’ rib steak
  • Add béarnaise, green peppercorn, extra port wine reduction sauce or truffle herb butter to any steak, or surf your turf by adding a Canadian lobster tail
  • Bourguignonne of Alberta Bison Short Ribs: slow cooked in red wine; served with whipped potatoes, pearl onions, mushrooms and bacon
  • Provençal Herb Crusted Rack of Lamb: fresh herb crust, light mint jus
  • Sauces, soups and reductions are housemade by the talented team of chefs
