Chef and owner Edmilson Rodrigues’ passion for the rich cultural heritage of the Brazilian Gaucho cowboy and 450 years of Rodizio barbecue are reflected at this restaurant. Each all-you-care-to-eat Rodizio meal includes hot Brazilian side dishes and a salad bar next to the open kitchen—tender selections of skewered meats carved tableside by churrasco chefs are the main event. A portion of this Canmore restaurant displays packaged gourmet Brazilian foods and curios that are for sale. Other Gaucho services include take-out and catering.

Atmosphere

The eclectic décor, Rodrigues family photos, sunny atrium and streetside patio contribute to the exciting dining experience. Warm blonde wood floors complement white and red brick walls, and silhouette cutouts of cowboys and horses remind patrons of the origins of the dishes they’re eating. Gaucho Brazilian Barbecue is great for a unique date idea or a fun celebratory meal.

Menu Samples

  • Sides: molho à campanha (Brazilian-style salsa); mandioca frita (cassava wedges with Parmigiano); pão de queijo (Brazilian cheese bread); camarão com coco (crispy coconut battered prawns with spicy pineapple salsa)
  • Feijoada: traditional black bean stew with garlic
  • Asa de Frango: beer and fresh herb chicken wings
  • Frango com Bacon: plump, marinated chicken breast wrapped in bacon
  • Chicken Hearts: marinated in white wine with fresh herbs
  • Lingüiça: smoky and zesty Spolumbo’s Gaucho sausages
  • Lombinho: rosemary and lime marinated pork loin
  • Perna de Carneiro: slow-cooked leg of lamb with mustard, honey and mint glaze
  • Costela: juicy marinated beef ribs, a Gaucho tradition
  • Alcatra: top sirloin with a garlic and white wine glaze
  • Picanha: thinly sliced tender rump steak with sea salt
  • Desserts: pudim de leite (traditional milk flan with caramel); the crowned king (BBQ pinaepple with coconut ice cream and guava coulis)
